Quail Egg Salad

… quail eggs are definitely not super easy to find, but they have the most beautiful shells and are quite high in iron and selenium… 


4 small orange tomatoes

4 small red tomatoes 

5 quail eggs

Rocket leaves 


Olive oil 

Balsamic vinegar / cream


In a saucepan bring some water to the boil. Turn down to a simmer and carefully add the quail eggs. Cook for 4 minutes on a medium heat for hard boiled (roughly 3 minutes for soft boiled) and then drain the water. Place the eggs in chilled water. Leave for a few minutes while you prepare the rest of the salad. 

Wash rocket leaves and plate these. Halve the orange and red tomatoes and add on top of the leaves. Sprinkle pomegranate seeds on top. 

Carefully remove the shells of the quail eggs and cut these in half. Add to the salad and dress with olive oil and balsamic vinegar / cream.
