Coconut Chia Pudding

… coconut chia pudding… the yogurt makes this one quite creamy… 

Serves 1

Ingredients:

1 tbsp chia seeds

1 tsp pomegranate powder

100mL plain yogurt 

100mL coconut milk 

Sprinkle of bee pollen (optional)

Method: 

Combine chia seeds coconut milk, plain yogurt and pomegranate powder and leave overnight in the fridge (or at least for a few hours). 

Add toppings in the morning – nuts, bee pollen and granola work well!
