… this has to be one of my favourite salads and it is very easy to make… works well as a side dish for lunch or dinner…
2 cooked beets
Handful of walnuts
2 tbsp honey
Wash spinach and chop the beets into smaller square pieces.
Heat up a pan on medium heat. Crush walnuts into quarters and add these to the pan along with the honey. Pan fry until caramelised (will require approx 3-4 minutes, stir every now and then so they don’t burn). Add the walnuts to the salad.
Sprinkle feta cheese, olive oil and balsamic vinegar on the salad as desired.
