Healthy McMuffin

… for when you’re craving McDonald’s like food in the morning… I think this version is definitely healthier and a lot tastier too…

Serves 1


1/2 English muffin

1/2 cucumber

2 slices of halloumi

1 large free-range egg

Sriracha sauce

1 tsp butter

Salt and pepper to taste


Lightly toast muffin using either a griddle pan or toaster.

Finely slice cucumber using a mandolin or peeler into ribbons and place on top of the muffin.

Heat butter in a pan, break the egg and place in pan. Reduce heat to low, cook slowly until whites are completely set, and the yolks begin to thicken slightly. Add the egg to the muffin.

Add the halloumi slices to the pan and fry until browned (should only require a couple of minutes).

Finely slice chives and add these along with the halloumi, hot sauce and salt and pepper to your liking.
