Pomegranate and Avocado Rye Toast

… think this one works well for both breakfast and lunch… it doesn’t involve much effort at all… just arranging some fresh ingredients!

Serves 1

Ingredients: 

1/2 ripe avocado

1/4 cup of pomegranate seeds

2 slices of dark rye bread

1 tbsp of olive oil

Handful of rocket leaves

Sprinkle of bee pollen

Salt and pepper to taste

Method: 

Place the rye bread on a griddle pan to toast (or simply put in the toaster if you have one of these).

Half an avocado, add salt and pepper and mash with a fork.

Spread the avocado mix onto the rye toast and add the pomegranate seeds and rocket leaves.

Sprinkle bee pollen on top of the toast and add a drizzle of olive oil.
